 Ingredients10 Prawns, deveined and butterflied1 medium sized Cucumber, cut into long thin sticks of about 8cm lengths
 1 Granny Smith Apple, half cut into fine sticks the other half reserve for the dressing
 1/4 Spanish Onion, finely sliced
 Few Coriander stalks, chopped
 1 Spring Onion stalk, chopped finely
 Pinch of SaltPinch of Black Pepper
 1 tablespoon of Vegetable Oil
 1/2 Lime2 teaspoons of Caster Sugar
 2 fresh Red Chillies, chopped finely (omit seeds to reduce the hotness if you desire)
 2 tablespoons of chopped Peanuts
 |  | CreateSeason the Prawns with salt and pepper and heat up the Fry Pan with the oil on medium heat. Pan fry the prawns until cooked. Depending on the size of the Prawns, this should take approx 3 mins and once ready set aside. To prepare the dressing, extract the juice of ½ a lime with a reamer into a small bowl. With the other ½ of the Granny Smith Apple, extract some apple juice with the reamer into the same bowl. Add the Sugar and the Chilli and mix well. In another bowl, mix together the Cucumber sticks, Apple sticks, Spanish onion, Coriander and Spring Onions. Add the Prawns and the Dressing and combine well. Portion out to 2 serving dishes and garnish with the chopped Peanuts when ready to eat. Serves 2 |
